Effect of total soluble solids, pH and yeast content on fermentation process of banana wine (Musa × paradisiaca)

Vietnamese Cavendish banana (Musa × paradisiaca) is a flavorful and nutritious fruit; however, it is highly perishable and difficult to preserve. It is primarily consumed when fully ripe, but its commercial value remains relatively low. The utilization of fully ripened Vietnamese Cavendish banana in winemaking was studied to produce higher value-added products and partly solve the environmental pollution issues. The study was conducted to determine the effect of three factors: soluble solids content (18, 20, and 22 °Bx), pH (4, 4.5, and 5), and yeast concentration (0.02%, 0.04%, and 0.06%, w/v) on the quality of banana wine. The results indicated that these factors significantly influenced parameters such as alcohol content, post-fermentation pH, post-fermentation soluble solids content, and residual sugar in the wine product. Banana wine achieved high alcohol content (13.3%), low residual sugar (1.19 g/l), low pH, and low Brix when fermentation parameters were set at pH 4.5, soluble solids content of 20 °Bx, and 0.04% added yeast. The results provide a scientific basis for the potential development of Musa × paradisiaca banana wine, with quality comparable to wines from other fruits in the Mekong Delta.
Effect of artificial intelligence utilization on student learning: A case study at two educational institutions in Ho Chi Minh city and Can Tho city

This study aims to analyze and evaluate the impact of artificial intelligence (AI) applications on student learning outcomes. The research was conducted through interviews and surveys with 500 students and 120 lecturers during the 2023–2024 academic period at the international joint training program of Greenwich University in Ho Chi Minh City and Can Tho. The results indicate that before the application of AI, students faced several challenges such as delayed support response times, low academic performance, and limited access to educational resources. Student satisfaction increased from 70% to 87% in Ho Chi Minh City and 65% to 81% in Can Tho. The average support response time was reduced from 120 minutes to 30 seconds in Ho Chi Minh City and 150 minutes to 2 minutes in Can Tho. Academic performance also improved, with the percentage of students achieving scores above 8.0 rising from 30% to 42% in Ho Chi Minh City and from 28% to 38% in Can Tho. These findings suggest that integrating AI in learning significantly enhances academic performance, increases student satisfaction, and provides effective learning support.

Limitations of liability for damages caused by animals and proposed solutions for improvement

Compensation for damage caused by animals is a very important content of the compensation regime for non-contractual damages. In fact, there are many opposing views and opinions surrounding compensation for damage caused by animals, and at the same time, the practical application is still difficult and inadequate. Vietnamese law does not have any specific regulations regulating and classifying animals that can be raised, restricted from raising or prohibited from raising. Regulations on the level of penalties for violations are still too low, not deterrent enough for owners to comply with the provisions of the law. Therefore, research on the responsibility to compensate for damage caused by animals can bring legal rigor and, more importantly, protect the rights and legitimate interests of the subjects regulated by this legal provision.
Limitations of the law on unemployment insurance and improvement suggestions

Currently, social security is an issue of special concern to the State. Job creation and unemployment are among the outstanding welfare issues. In Vietnam, unemployment insurance has the most practical purpose of compensating or replacing part of the income of employees when they lose their jobs, supporting workers to learn a job, maintain their jobs, find jobs based on contributions to the Unemployment Insurance Fund. This is considered a practical solution to help employees soon find jobs and stabilize their lives, thereby reducing the burden on the state budget, contributing to the stability of social security. However, at present, the law on unemployment insurance still has many limitations, adversely affecting the protection of legitimate interests for employees. Based on the analysis, synthesis and evaluation of the provisions of the Law on Employment 2013 and other relevant legal documents, the author learns the limitations of the law on unemployment insurance as well as proposes some measures to overcome these limitations.
Assessment of the status and causes of domestic violence crimes in My Tho city, Tien Giang province

The study aimed to analyze the crime situation and determine the causes and conditions of domestic violence crimes by using statistical methods, synthesizing data from the People's Court of My Tho City and sociological methods. The results showed that the situation of domestic violence crimes in My Tho City tends to increase and become more complicated. There are four groups of causes and conditions that give rise to domestic violence crimes, namely: economic and social causes and conditions; organizational and management causes and conditions; cultural and educational causes and conditions; and psychological and cognitive causes and conditions. From there, the author proposes measures to prevent domestic violence crimes in My Tho City, Tien Giang Province in the coming time.

Evaluating the effects of indigenous Bacillus in nitrogen and phosphorus transformation in sediment of Artemia pond

The research aimed to select indigenous Bacillus sp. from Artemia farming ponds with high ability to hydrolyze nitrogen, phosphorus and exhibit antibacterial activity against Vibrio parahaemolyticus. A total 12 of Bacillus strains were successfully isolated with three different groups of cloudy white (CW), clear white (CW), and yellow (Y) from Artemia farming ponds’ sediment in salinities of 60‰ and 80‰. The most nominant strain was identified as Bacillus subtilis showed high effectiveness on nitrogen and phosphorus hydrolysis, and antibacterial activity against Vibrio parahaemolyticus. Nitrogen and phosphorus transformation of this selected bacterial strain was tested with two different salinity levels 60‰ and 80‰. The results showed that amendment of isolated Bacillus subtilis strain at a density of 109 CFU/ml has tended to restrict the density of Vibrio parahaemolyticus, reduced levels of Total Ammonium Nitrogen (TAN) and NO2-, and increased the available of NO3- and phosphorous in the soil.
Evaluation the fermentation of yeast strains isolated from white dragon fruit (Hylocereus undatus) for wine production

The study was conducted to select yeast strains with high fermentation from the puree of white-fleshed dragon fruit (Hylocereus undatus) harvested in Chợ Gạo District, Tiền Giang Province, for producing high-quality fruit wine. The results identified nine yeast strains capable of fermenting both glucose and sucrose among the 47 isolated pure yeast strains. All nine strains exhibited the ability to ferment white-fleshed dragon fruit wine, with strain TR11 demonstrating the highest fermentation activity. After seven days of fermentation with strain TR11, the resulting wine achieved the highest alcohol content of 11%, a low residual sugar content (1.87 g/l), a low pH (4.07), and a soluble solids content of 13.1 °Bx. These findings indicated that strain TR11 was the most suitable for application on white dragon fruit wine production.
Effect of bacillus isolated from Biofloc particles in improving growth of whiteleg shrimp (Litopenaeus vannamei)

This study aimed to isolate and select Bacillus strains from biofloc particles capable of hydrolyzing starch and nitrogen, , antagonistic activity against Vibrio parahaemolyticus, to improve the performance of intensive whiteleg shrimp (Litopenaeus vannamei) in aquaculture systems. The experiment was conducted at the Experimental Facility of the Faculty of Applied Biology, Tay Do University, utilizing five carbohydrate sources: Pellets (control), rice flour, wheat flour, seaweed, and molasses. The results identified a Bacillus subtilis strain with opaque white colonies, originating from rice flour. This Bacillus strain was tested in a white leg shrimp culture with varying Bacillus subtilis densities: Control, 105 CFU/mL; 107 CFU/mL; and 109 CFU/mL. The experiment was conducted over 60 days in composite tanks with a capacity of 500 liters per tank. Shrimp stocking density was 150 individuals/m³, with an initial shrimp weight of 0.45±0.09 g/individual. Results shown that supplementation with Bacillus subtilis at 10⁹ CFU/mL significantly improved shrimp survival rate, length, weight, and biomass, while achieving the lowest feed conversion ratio (FCR), with differences (p<0.05) compared to other treatments. These findings are promising and provide a foundation for further trials in practical scale of intensive shrimp farming systems.
Selection of yeast strains isolated from the juice of red dragon fruit (Hylocereus polyrhizus) cultivated in Cho Gao district, Tien Giang province
